Abstract
Through the single factors and orthogonal tests,the preparation conditions of rapeseed protein isolate was studied from dehulled cold-pressed double-low rapeseed meal by alkali-extraction and twice acid-precipitation.The result showed that the effect of extraction pH on extraction rate of protein isolate was the most,the ratio of solvent to stuff was second,extraction time was least.The optimum conditions were obtained as follows:temperature 60 ℃,pH 11.0,ratio of solvent to stuff 15:1,extraction time 30 min.Under the above conditions,the extraction rate of protein was 87.69%,and the protein content was 77.45% in the product.
