Abstract
631 wheat varieties in North and Huang-Huai Winter Wheat Area were selected,five quality traits were studied.The results showed that,winter wheat had the trait of higher test weight;protein content and wet gluten conte were at relatively high.Only 2.53% and 0.95% of the wheat varieties met the requirement of mid-gluten wheat.The majority of flour water absorption rate and stability time were at intermadiate level,21.08% and 22.19% of the wheat varieties met the requirements of strong gluten wheat,16.00% and 19.49% of them met the requirement of mid-gluten wheat.Cultivar classification showed that 85.11% varieties were the weak gluten wheat,14.10% were the strong gluten wheat,only 0.79% were the mid-gluten.
