Abstract
The enzymatic hydrolysis extraction of collagen from grass carp fish scale was studied. The extraction rate was taken as the evaluation index and hydrolysis temperature,pH,enzyme dosage,and reaction time as the investigation factors. The orthogonal experiment determined the best solution for the extraction process as A2B2C3D1,namely hydrolysis temperature 30 ℃,pH value 4,enzyme dosage 2% and the reaction time 1h. Under these conditions,the extraction rate of collagen from grass carp fish scale is 92. 28%.
