Abstract

In this article, sweet sorghum stem pole juice with the soluble solid shape density of 16%, was taken as the material. Take(NH4)2SO4 as nitrogen source was determined through the single factor experi-ment. To study the effect of different pH value, the temperature, the time on the alcohol yields, the orthogonal experiment was carried out. The suitable fermentation condition were as following: pH5.0, inoculation volume 10%, the temperature at 30 ℃, time 48 h, may obtain 10.0%(v/v) alcohol.
