Abstract
OBJECTIVE The extraction technology of garlic oil from Allium sativum L.by supercritical CO2 extraction(SFE-CO2)was studied in this paper and the components was analgsed by GC-MS.METHODS The optimum extraction technology was determined by orthogonal experiments.The best extracting condition was as follows;temperture:35℃,pressure:20mPa,CO2 flux:30L/h,time:3h.RESULTS The extraction rate of allicin was 0.350% The temperature of extraction was the significant factor.After the analysis of GC-MS,it showed that 3-vinyl-1,2-dithiocyclohex-4-ene and 3-vinyl1,2-dithiocyclohex-5-ene were distinct in garlic oil by SFE-CO2.CONCLUSION The Garlic oil extracted by SFE-CO2 has less impurity,better characteristic flavor and the method is an effective flavors method.
