Abstract

This study obtained the essential oil from garlic by supercritical CO_2 extraction,determined the chemical components of essential oil by GC-MS technique,and compared the essential oils extracted from garlic by solvent and hydrodistillation.The results showed that the oil extracted from garlic by supercritical CO_2 contained higher allicin content than that by solvent exatration and hydro-distillation,which suggesting that supercritical CO_2 extraction was a better method for extraction of garlic oils.
