Abstract

Reaction of wheat starch with propylene oxide in aqueous slurry for producing hydroxypropyl wheat starch was investigated.The factors affecting the degree of substitution and the reaction effciency were studied,and the orthogonal experiment was employed to obtain the optimal reaction condition for higher molecule substitution.Properties of gydroxypropyl wheat starch with different degrees of substitution were also studied.
