Abstract

In this Paper, the properties and the optimum conditions for the preparation of Hydroxypropyl corn starch were studied, emphasizing the effects of starch concentration, propylene oxide, temperature, time on the molar substitution and reaction efficiency. Results indicated that the freeze thaw stability and transparency of the resulting paste were improved.
