Abstract
Extraction process of natural pigment was researched,taken fresh Red Globe Grape peel as materials.The optimum process conditions of extraction were gained by orthogonal experiment.The optimum process conditions were as follows: 80% ethanol as extractant,pH value was 3,extraction temperature was 70 ℃,and the ratio of material to liquid was 1∶9.As well as,the stability of pigment in Red Globe Grape was researched.The results showed that pigment remained stable and exhibited good heat-resisting and light-resisting properties at pH 2-6.Some metal ions had some effect on stability of pigment.Cu2+,Fe3+,Fe2+ could greatly damage pigment chroma,while Mg2+ could protect it.H2O2 and Na2SO3 could damage pigment chroma in some degree.
