Abstract

Using grape peel residue from wine as raw material,extraction technology of pigment was optimized by orthogonal design on the basis of single factor experiment.And stability of pigment was studied.The results showed that the optimuml extraction technology was using 70% ethnol,pH 3,ratios of solid to liquid by 1(g)∶20(ml),extracted at 60℃ for 50 min.Under optimum conditions,the yield of pigment was 6.2%.The pigment was stable to high temperature,light,common ions,food additives,carbon hydrates and other substances in acidic condition.
