Abstract
The volatile components of black pepper were extracted by solidphase microextraction ,26 components were identified by GC / MS method. The identified compounds make up 87.23% of the total volatile substances. Of them the main constituents are: terpinenes, the contents of the identified terpinene compounds make up 46.6 % of the total volatile substances detected.
