Abstract
In this paper,rapeseed meal was hydrolysed by alkaline protease and neutral protease.The relationship between the peptides yield and enzymatic hydrolysis conditions was studied.The reaction conditions catalyzed by the mixed proteases were optimized by the response surface methodology.The results showed that the optimizing hydrolysis condition was the enzyme dosage 4500 U/g,hydrolysis temperature 50 ℃,pH 8.0,the ratio of material to water 1:8,the ratio of alkaline protease to neutral protease 3:1,hydrolysis time 6.5 h.Under these conditions,the peptides yield was about 54.89%
