Abstract
The relationships between the β-glucan,polyphenols and total protein in four kinds of barley were studied. The results showed that the β-glucan content had positive correlation with total protein while the polyphenols were nega- tive (R~2=0.8941 and 0.9340).The subsequent malts were also studied in this paper.The results showed that the total protein had positive correlation with extract,α-amino nitrogen,soluble protein,and protease activity (R~2=0.9276, 0.8783,0.9801 and0.9643),but negative with Kulbach index and polyphenols (R~2=0.9950and0.9838).And there was no relationship between total protein and the β-glucan content.Different kinds of additives were added during the steeping to study their effects on the high protein harley's malting characteristictics.
