Abstract
To study on the biological activity of garlic powder with high thiosulfinates content which was produced by microwave-vacuum drying combined with vacuum drying method.Compared with tea polyphenol,Adopting four kinds of different invitro experiment models separately to study on the scavenging action of garlic powder to ·OH,·O-2,DPPH˙and NO2-.The results showed that thiosulfinates had high free radical scavenging ability,and the scavenging ratio was linear with its' concentration.Thiosulfinates were more powerful than tea polyphenol to scavenge NO2-.
