Abstract
The effect of sterilization on leafy vegetables with electrolyzed water of different pH values was studied under laboratory conditions.The results showed that the electrolyzed water has obvious effect on sterilization of bacteria and fungi which on the leaf surface;acidic electrolyzed water on the leaf surface of the inactivation of bacteria and fungi is better than alkaline electrolyzed water.Higher concentrations of acidic electrolyzed water had better effect on the leaf surface of the inactivation of bacteria and fungi than the lower one.Electrolyzed water is in acid group has most significant effect,which testing physical and chemical indicators was about 3.0 pH value,1 000 mV ORP,100 mg/L ACC.
