Abstract
The change of the content of soluble sugar,organic acid and vitamin C of peach fruit in greenhouse was studied.The total content of soluble sugar increased gradually with the fruit maturing,but the reductive sugar and non-reductive sugar content showed evidently different trends of change.The change trend of the content of organic acid was highest in young fruit,after that,it decreased gradually and reached to the lowest level at the fruit maturation.The change trend of vitamin C content of peach showed aV—shape curve,and it was higher in young fruit and maturation and lower in other periods.
