Abstract

The contents of soluble sugar,organic acids and vitamin C were studied in the fruits of 2 peach cultivars and 2 apricot cultivars during maturation in greenhouse.The results were as follows: the change trend of soluble sugar content of peach and apricot were the same,which increased gradually with the fruit maturing,while the trend of reducing sugar content differed from that of nonreducing sugar content;the content of organic acids of peach was highest in the young fruits of peach,afterwards decreased gradually and reached lowest at maturation stage,but the content of organic acids of apricot at the stageⅡ was highest and than fell down to the lowest at mature stage;the content of vitamin C both of peach and apricot showed a V-type change,higher in young fruits and mature fruits.
