Abstract
The cold-sensitive fruits and vegetables occured chilling injury(CI) symptoms under the inappropriate low temperatures conditions.Disease resistance and storability of chilled fruits and vegetables both decreased,it would cause serious decay and quality deterioration,which influenced the edible and commodity values.This paper reviewed the basic CI symptoms characteristics and changes in physiological and biochemical characteristics of fruits and vegetables,summarized the research progress on occurrence mechanism and control technologies of chilling injury of fruits and vegetables,and proposed problems which need further research and solution.
