Abstract
Soluble dietary fiber(SDF) was extracted from soybean dregs in this study.The optimal conditions of extraction of SDF were determined by single factor experiment and orthogonal experiment,and its function parameters were further determined.The results showed that the optimum conditions for extraction of SDF in soybean dregs were as follows:extraction temperature 90℃,extraction time 1.5h,sodium carbonate concentration 4% and pressurization time 1.5h.Under these optimum conditions,the extraction rate of SDF,the water holding capacity of SDF and the expansibility of SDF were 52.4%,3.1990g/g and 6.3894ml/g,respectively.
