Abstract
The soybean dregs was pretreated in high pressure for 1.5 h at 120℃,then extracted with sodium carbonate solution and precipitated with alcohol to prepare soluble dietary fibre(SDF).By single factor and orthogonal test,the optimal conditions of extraction with sodium carbonate solution were determined.The results showed that the extraction rate of SDF reached 44.3% when 4% sodium carbonate solution(mass fraction) was used to adjust the pH of raw liquid to be 12,then the liquid was extracted for 1.5 h at 90℃.
