Abstract
The extract ways of Monascus pigment were studied.The result indicated that the optimum extraction process of the mycelium intercellular pigment were:extracted 60min at 60℃ with 60% alcohol,the oprimum extraction ways of pigment in culture fluid were active-carbon absorb way and isoelectric fractionation.
