Abstract
Increasing PUFAs (polyunsaturated fatty acids) in glyceride of fish oil by selective hydrolysis with lipase was studied. Through selection of 5 lipases from different sources, the lipase from Aspergillus oryzae showed the best quality. The conditions for hydrolysis of fish oil with this lipase were optimized, including temperature, rotate speed, ratio of oil to water, amount of lipase and additives. Finally, the optimum time for enriching PUFAs in glyceride was confirmed. The results showed under the hydrolysis conditions the content of EPA was increased from 3.0 % to 9.0 %, DHA from 4.3 % to 16.5 %, and DHA + EPA from 7.3 % to 25.5 %. Fig 3, Tab 1, Ref 8
