Abstract
Defatting technology was studied during the preparation of insoluble dietary fiber(IDF)from soybean residue.The technologies of alkaline defatting and lipase hydrolysis defatting were compared by investigating the defatting rate and the yield of IDF.Optimum conditions for each defatting method was determined by orthogonal test.Under the optimum conditions of alkaline defatting,the defatting rate was 97.13%,and the yield of IDF was 58.37%.Moreover,the defatting rate was 82.20%,and the yield of IDF was 69.65% under the optimum conditions of lipase hydrolysis defatting.
