Abstract
On purpose of developing antioxidant from silkworm cocoon shells,bacterial neutral proteinase Multifect Neutral was used to hydrolyze cocoon,and the total antioxidation capacity(TAC) of hydrolysates was tested by FRAP method.The optimal hydrolysis parameters of neutral proteinase including temperature,time,pH,enzyme content and the substance concentration in enzymatic reaction system were determined by orthogonal design L_(16)(4)~(5),respectively.The results showed that the optimal conditions for producing protein hydrolysates with the highest TCA are 55 ℃,pH 6.5,enzyme content 7.0%,substance concentration(0.033 3 g/mL),and time duration 210 min.
