Abstract
To establish the optimal preparation technology of antioxidant peptide from cocoon.Bacterial neutral proteinase Multifect was selected as the best hydrolyzing enzyme in five kinds of protein enzymes by assessing the total antioxidation capacity of hydrolysates.Based on single factor(pH,enzyme concentration,substrate concentration,hydrolysis time) experiment,the optimum conditions are determined by orthogonal experiments,which was: 60 ℃,pH 6.5,enzyme concentration 10 %(based on the substrate quality),substrate concentration 3.3 g/100 mL and hydrolysis time 210 min.Under this condition,the total antioxidation capacity(A595) of hydrolysates which was diluted five times was 1.795,DH was 4.23 % and solids was 9.2 mg/mL.
