Abstract
The antioxidant of polyphenol extracted from oil tea cakes was studied in this paper, including the DPPH radical scavenging activity, reducing power, hydroxyl radical scavenging activity and so on,BHT as the reference. The results showed that isopropyl alcohol extracts had higher scavenging activity of DPPH radical and hydroxyl radical, higher reducing power;Normal hexane extracts had higher scavenging activity of superoxide anion, and higher complexation power;Diethyl ether extracts had higher complexation power. It meant that extracts had higher capacity of antioxidation and health care function.
