Effect of phytase application on availability of Ca,Fe and Zn from rice bran

Abstract

Rice bran contains high levels of minerals.But it is not a good source of minerals due to high levels of phytic acid(important inhibitor of minerals absorption) exist.Rice bran was selected as material and treated with commercial phytase for study on availability of Ca,Fe and Zn with in vitro model.It was showed that application of phytase could effectively decrease contents of phytic acid in rice bran.And about 95% decreased after treatments of phytase at concentration of 2.5 U/g and treated for 2 h.Availability of Ca,Fe and Zn in treated rice bran increased with decrease of phytic acid.Further analysis showed that availability of Ca and Zn in rice bran was significantly negatively correlated with contents of phytic acid.However,Fe was not.
