Abstract
The commercial and synthesized sucrose esters were analyzed with HPLC-ELSD method.Their separation and determination were also carried out.Samples were analyzed by a hypersil C8 reversed phase column(250 mm,4.6 mm,5 μm particle size) using V(methanol)∶V(tetrahydrofuran)=90∶10 and water under gradient conditions as the mobile phase, the flow rate was 1.0 mL/min and the column temperature was set at 40 ℃.This procedure provided a complete separation and determination of sucrose, sucrose monoester, sucrose diester, fatty acid, methyl stearate and sucrose higher esters in each fraction on a single run.The described method is found to be straight forward, rapid, efficient and can be readily applied for the analysis of sucrose esters during the processes of synthesis, purification, and structure studies.
