Abstract
The technology for extracting β-1,3-glucan from yeast by enzyme-alkali method was studied in this paper.The optimum process technique was achieved through orthogonal test: the precipitate after enzyme hydrolysis treated with 60 ml of 2% NaOH solution at 75℃.The yield ratio of glucan 21.38% after vacuum freeze-drying,within which the content of polysaccharide,protein and moisture was 92.17%,1.32%,and 5.53% respectively.The enzyme-alkali method showed high glucan yield ratio and low protein content.
