Abstract
β-carotene was extracted from carrot by microwave-assisted extraction.The effects of solid-liquid ratio,microwave time and microwave power on the yield of β-carotene were investigated,and the extraction process was optimized by orthogonal tests.The results showed the optimum technological conditions as follows:solid-liquid ratio 1:20,microwave time 45 s and microwave power 500 W.The yield of β-carotene was 41.2% under these conditions.
