Abstract
Microwave-assisted extraction of β-Carotene from carrot was studied.On the base of the single factor experiments,the microwave power,extraction time and ratio of solution to material were studied with three-factor quadric universal rotational combination design.The predictive quadratic equations model was developed by SAS(9.0)software.The best microwave power,extraction time,the ratio of solvent to material and solvent were 394W,6min,43.4ml/g,and salad oil,respectively,under which the yield of the β-carotene was up to 0.399mg/g.
