Abstract
With Paphia undulate as the raw material,the micromolecule peptide was prepared by the enzymolysis of Paphia undulate meat with alkaline protease.Moreover,the optimal conditions for enzymolysis of Paphia undulate were designed with response surface method.The results showed that the optimal conditions were as follows: when the pH was 6.5,liquid-to-solid ratio was 3∶1,enzyme loading was 2.50%,enzymolysis temperature was 50.4℃,enzymolysis time was 122.60 min,the extraction rate of micromolecule peptide was the highest,reached 63.04%.
