Abstract
Ethylene production, MDA content and LOX activity of postharvest li jujube fruit increased, butfirmness, VC content and sound fruit rate decreased. Treatments of li jujube with IAA, ABA and ethephonenhanced the ethylene production in the initial stages after harvest, increased the MDA content and LOX activity, accelerated the softening, decreased the VC content and sound fruit rate of li jujube; meanwhile the effect ofABA was more obvious. There were significant negative correlation between LOX activity and hardness, soundfruit rate of li jujube. The results indicated that there was the relationship between LOX and softening of lijujube fruit in a certain extent.
