Abstract
Collagen protein was produced through papain enzymatic hydrolysis using squid skin as material. The influence of enzymatic hydrolysis conditions such as squid skin concentration, enzyme concentration, hydrolysis time, pH value, and temperature on the extraction yield of collagen protein were studied systematically. The results showed that the optimal conditions were: enzyme concentration 1%, the ratio of solid to solution 1:10, time 8h, temperature 40℃. Under these conditions, the best value extraction yield is 11.01%.
