Abstract
This study investigated the growth of Listeria monocytogenes and the optimized effects of storage temperature and modified atmosphere packaging (MAP) on this pathogen. Results showed that lower temperature and MAP both inhibite the growth of L.monocytogenes, and the latter is better. The chilled pork is kept in the range of 0~4 ℃, and MAP of high CO2 concentration is introduced to inhibit the proliferation of L.monocytogenes effectually.
