Study on bacteriostasis property of Buckwheat vinegar andantioxidant activity of its extract

Abstract

Bacteriostasis property of buckwheat vinegar and the scavenging quality of DPPH free radical,hydroxyl free radical(·OH)and superoxide free radical(O2-·)of buckwheat vinegar extract were studied.The result showed that buckwheat vinegar had strong inhibitory effect on Escherichia coli and Staphylococcus aureus;buckwheat vinegar extract had good scavenging effect on DPPH free radical,hydroxyl free radical(·OH)and superoxide free radical(O2-·).
