Abstract
Ginger proteases in ginger rhizome(Zingiber Officinale Roscoe)were extracted and partially purified.The main characterization of the proteases was studied with casein as substrate.The optimal pH was 6.0;the optimal temperature was 60 ℃;The change of the enzyme vigour can not be detected when the protease were kept for 30 min at 30 ℃,but the enzyme vigour descended immediately when the temperature was above 72 ℃.Half life at 60 ℃?75 ℃?80 ℃ was 17?12 and 3 min individually.Km was 0.270 mmol/L,DTT,EDTA were activators of the proteases and PCMB,ZnCl 2,CuSO 4 were inhibitory factors.CaCl 2,MgSO 4 and AlCl 3 can not affect the activity too much.
