Abstract
The effect of the various carbon and nitrogen sources on fermentation of Penicillium P11 that produces phytase was studied.The results indicated that the best carbon and nitrogen compounds for this strain were sucrose,peptone and ammonium nitrate respectively.The optimum producing condition was cultivate temperature at 30℃,pH of the fermentation medium at 5;medium quantity,10%;inoculation proportion,4%;rotate speed of the shaker,120r/min;fermentation time,96h.The highest enzyme activity could reach 2.63U/mL.
