Abstract

The effect of various carbon and nitrogen sources on Penicillium P-1 producing phytase was studied.The results indicated that the best carbon source for this strain was sucrose and the best nitrogen sources were peptone and ammonium nitrate.The optimum producing phytase conditions were as follows:cultivate temperature 30℃,optimum pH of the fermentation medium= 5,medium quantity 10%,inoculating proportion 4%,rotate speed of the shaker= 120 r/min,fermentation time 96 h.and the highest enzyme activity 78 U/L.
