Abstract

Microencapsulation of oleoresin ginger, which was extracted as core material from ginger with ethanol, was investigated. The 3-cyclodextrin was selected as wall-material, and the ginger oil-resin extracted was microencapsulated through emulsion, homogenization and spray-drying. By way of the orthogonal experiment, the optimum technology conditions were: core-material: wall-material(mol/mol) of 1: 1.5, stirring time of 30min, stirring temperature of 30℃ and arabic gum: p-cyclodextrin(w/w) of 3%.
