Abstract
Microencapsulation of ginger was investigated, which oil- resin was extracted as core- material by alcohol from fresh ginger and the arabic gum and maltodextrin were used as wall- material. Spray drying was adopted to prepare ginger microcapsule. An orthogonal experiment was done to determine process technology of ginger microencapsulation. The optimum technological conditions, ratio of core- material and wall- material, intake air temperature and ratio of arabic gum and maltodextrin, have been obtained.
