Abstract
Effects of extraction conditions on antioxidant activity of hazelnut shell extract were studied in this paper.The results showed that hazelnut shell extract has antioxidant activity,and the total antioxidant capacity of hazelnut shell extracted by NaOH solution was 1.83 folds higher than that of ascorbic acid.The optimal extraction conditions were obtained by response surface method(RSM) as follows: NaOH concentration 2.4%,the ratio of solid to liquid 1:36,extraction time 2.3h and extraction temperature 63℃.Under these conditions,the total antioxidant capacity of hazelnut shells extraction was 0.931.
