Abstract

49 representative liquor samples of different liquor flavor types passed through tasting and evaluation in 2007 National Liquor Annual Meeting. In this paper, the evaluation of those 49 liquor samples were summarized as follows: Luzhou-flavor liquor has comparatively perfect taste and soft and harmonious liquor body, Luzhou-flavor liquor produced by multiple grains has good aging aroma, and Luzhou-flavor liquor has lots of liquor products and it emphasizes aroma; Daqu Fen-flavor liquor and Xifeng-flavor liquor still keep their individual styles; the quality of Erguotou liquor improves evidently with less bran taste and clean liquor body; Maotai-flavor liquor has high quality; the quality of pure Sesame-flavor liquor improves significantly; the quality of liquor of mixed flavors improves a little but the prominent Maotai-flavor is inadvi- sable; Nutritional type liquor lacks of typicality (still in trial stage) and more shortcoming wait for further improvement.
