Abstract

Objective:The optimum hydrolysis conditions for peptides producing from tilapia protein were studied.Methods:The protein was hydrolyzed by Alcalase 2.4 L,The influence of temperature,pH,time and E:S of hydrolysis to the content of peptides in the protein hydrolysates were studied.And optimization of the conditions for hydrolysis was ensured by regressive orthogonals experiment.Results:The optimum condition for hydrolysis with alcalase was pH 7.5,the ratio of fish flesh to water 1∶3(W∶V),E∶S=1%(applied alcalase liquid),for 4 h at 65 ℃.At these conditions,hydrolysate of rich pipetides could be obtained while the degree of hydrolysis(DH)was 38.46%.Conclusion:The study results provide a sound theory basis for exploring tilapia usage.
