Abstract

Alcalase was used to hydrolysis tilapia protein and the hydrolysis parameters were optimized.D113 cation exchange resin was used to deodorization.Results showed that freezing pretreatment increase the degree of hydrolysis(DH)and a maximum DH of 18.23 % was obtained by hydrolysis for 3.0 h using alcalase at 60.0 ℃,pH8.0,enzyme dosage 3 000 U/g(basis of substrate protein),and liquid/solid ratio 3:1(g/g).A clarified product with low fishiness,light golden color was obtained after treated with D113 resin.
