Abstract
The effects of ultrasonic time, ultrasonic power and water extraction time on polysaccharides extraction from chestnut(Castanea mollissima) fruits were studied by single-factor experiments.L9(34) orthogonal design was used to optimize the extraction conditions. The results showed that the optimal extraction conditions of polysaccharide from chestnut fruits were, ultrasonic time,35 min;ultrasonic power,100 W;water extraction time,60 min.The yield of polysaccharide was 13.94% under these conditions.Water extraction time had the most obvious influence on the yield of polysaccharides.
