Abstract
Glucoside isoflavone were hydrolyzed aglycone isoflavone using immobilization of β-glucosidase,which may enhance the biological activity of soybean isoflavone. The conditions and activity of immobilized enzymes were investigated. This experiment the embedding material was chitosan and sodium,the crosslinking agent was glutaraldehyde. The best immobilization method was determined by the single factor and the orthogonal experiment:the density of chitosan(DD%=85%),sodium,glutaraldehyde,calcium ion,pH value were identified 1.5%,2%,1.0%,0.7mol/L,5,respectively.The activity of immobilized enzymes was 83.8%.
