Abstract
As an important protein source of human being,the composition,structure and function of wheat storage protein were much concerned by scientists.As research goes further and further,the location,structure of wheat glutenin chromogenes are gradually known to people.This is very important to improve the quality of wheat flour.This paper introduces the technology of extraction,purification,sodium dodecyl sulphate polyacrylamide gel electrophoresis(SDS-PAGE),reserved-phase high-performance liquid chromatography(RP-HPLC),high-performance capillary electrophoresis(HPCE) for HMW-GS and LMW-GS and their genes.
