Abstract
When gelatin, the model of collagen, reacted with different tanning agents such as CrCl_(3) 6H_(2)O,tannic acid and glutaraldehyde, its Zeta potential in different temperature, concentration and pH was investigated by Zetasizer Nano ZS series instruments. From the point of view of gelatin's electrochemistry properties, the tanning mechanics were analyzed. Results showed that all the three kinds of tanning agent-gelatin complexes carried positive charges, the tannic acid-gelatin complex had the positive reacted charges, and the protonated amino groups were the source of the positive charge.Tannic acid reacted with the peptide linkage of gelatin molecule.Because the hydrophobicity was improved after gelatin reacted with glutaraldehyde, the positive charge on the surface of the glutaraldehyde-gelatin complex increased.Furthermore, the experiment also confirmed that chrome complex reacted with the carboxyl of gelatin.
