Abstract

With Dong jujube as materials,different Ozone treatments on activity of PPO and POD were studied.The results showed that ozone treatment could inhibit the activity of the jujube polyphenol oxidase PPO and peroxidase activity of POD to maintain a high level.And the best Ozone treatment was 40 mg/m3.
